Meet the Angels for a good cause!

I have had the opportunity to put some of my "Sweet Darlin' Angels" in a Art Show to help children in need! If you would like to come check it out, it's at Life Church in Deep Ellum, from 7-11pm on July 1st, 2011.  Come stop by for coffee, fellowship, art, and live music!  Here's a little about the fundraiser.....


The Royal Family Kid's Camp is a non-profit organization, created to serve and care for the abused and neglected children of America. Since 1985, we have been able to impact many children’s lives by providing them one week of freedom from the abuse and mistreatment that they receive on a daily basis. We have been working with social services for years trying to connect the worst reported cases of abuse with our organization to provide these children with a week of camp, mentors, and clubs for them to join for support groups.

The camp is one week where the children will experience love, acceptance, and encouragement—many for the first time in their lives. We will be providing food, shelter, and throwing each child a birthday party—because many of the children have never been celebrated in this way or for any other accomplishment. It is our hope that the funding for this organization would continue to grow so that we could support more abused children in the surrounding counties—and not have to turn so many mistreated children away.

This year we are planning a "Where The Wild Things Are" fundraising event on July 1, 2011 to raise money and awareness for this cause. The event will be held at "Life in Deep Ellum" where artists and musicians from the Dallas area will be coming together to inspire others to give. Businesses from around the Dallas area are donating money and prizes to raffle off in a drawing that will provide more funding for the camp.

We are humbly requesting any donation you may have to assist in our quest to reach out to the abused and neglected children in this area. If there is anything you can do to help, or any prizes you are willing to donate—please let me know. We most graciously appreciate you considering joining with us on our pursuit to help those in need. We trust you see and feel the need to help end this travesty that is taking place on a daily basis.

Salmon Burgerz



Grill, bake, or pan fry wild salmon with olive oil and garlic salt to season
Saute purple onions in pan with olive oil and brown sugar
mix in a bowl pesto sauce and ranch dressing
Broil hamburger buns w/a little bit of butter (onion flavored or a sweet bread is yum)

Now just spread sauce on buns, top with onions and salmon and enjoy!

I don't care.....

"How do you get your nearest and dearest to change their behavior? Love them unconditionally says Martha Beck. And how do you do that? Simple: Stop giving a damn what they do."  

This articles first few lines caught my attention, and I soon had my nose in the magazine the whole flight to Tulsa.  I like to get inspiring books, or articles to read, because trashing peoples bodies and the "who cheated on who?" stories are just depressing and don't lift anyone up.  So, I got the "O" Magazine and found a article that hit the spot, just like a bowl of ice cream before bed. 
I learned to stop caring, and shift my focus from controlling my loved one's behavior, to creating my own happiness.  It is important to create my own happiness!!! I know we wish everyone would just do as we say, but it doesn't work that way so we need to find another route.  
I am going to work on being content in my life, even if the family is going through a crisis, or the man is being hardheaded, or you my friend won't take my advice.  I just want to be there for them and love them unconditionally.  Love conquers all!  Love and let love, live and let live!  If they must disagree, then you must not care!

Are you listening?

It is important to listen to your mother, she is always right, right? Well, this time my heart is what I need to stop and listen to.  Some of the best listeners are animals, what if they could talk, we would lose some of our best listeners.  One of the best gifts to give is listening.  Try it!  It's funny we have 2 ears and 1 mouth, that should be a big enough sign or gift that God gave us.  God also is not going to leave us in the dark or give us more than we can handle.  God wants you to be specific when you pray.  Right now one of my prayers is praying for clarity on something.  Have you ever got a "sign" and thought it happened for a reason?  Then you start to second guess yourself and think, Lord, I need another sign if this is you telling me something.  It's funny to ask for another sign from Him, but it's ok, and the Lord wants to guard and guide you if you trust in Him.  I am reminding myself everyday, that the Lord is in control if I just let go and let God.
Make sure you are slowing down enough to listen to Him and what your heart is telling you, if not, then you just might miss something very special He has planned for you.
 I pray that whoever needs a little guidance that the Lord will direct their paths to what He has planned for them, and listen whole-heartedly.  Remember no one listens until you fart! haha just kidding, but really it's kind of true.  I hope this blesses someone who needs to know we all go through valleys in life and you're not alone.  It's the mountains we climb that make us stronger and get us to the top!

My BFF's Favorite Baking Cake

FAITH'S COCA-COLA CAKE 

Makes: 12 servings 
Hands-on time: 25 min. 
Total time: 60 min. 

2 cups all-purpose flour 
2 cups sugar 
1 cup butter 
2 tablespoons cocoa 
1 cup cola soft drink 
½ cup buttermilk 
1 teaspoon baking soda 
2 eggs, lightly beaten 
1 tablespoon vanilla extract 
1½ cups miniature marshmallows 
Chocolate Coca-Cola Icing 
Garnish: Toasted chopped pecans 

1. Preheat oven to 350°. 

2. Combine flour and sugar in large mixing bowl. 

3. Combine butter, cocoa and cola in a medium saucepan over medium-high heat, stirring occasionally until mixture comes to a boil. Remove from heat; pour over flour mixture. Add buttermilk, baking soda, eggs and vanilla, whisking until blended. Stir in marshmallows. (Batter will be thin and marshmallows will float to the top.) 

4. Pour batter into lightly greased and floured 13x9x2-inch pan. Bake 30 to 35 min. or until a pick inserted in center comes out clean. Remove from oven; cool 15 min. Spread Chocolate Coca-Cola Icing over warm cake. Garnish with toasted chopped pecans, if desired. 

CHOCOLATE COCA-COLA ICING 

½ cup butter 
3 tablespoons cocoa 
6 tablespoons cola soft drink 
1 (16-oz.) package powdered sugar, sifted 

Combine first three ingredients in a medium saucepan over medium heat, stirring until butter melts. Remove from heat; whisk in sugar. 



Spice it up!

Fresh Salsa less than 30min!

What you will need:
Pandora playing Citizen Cope or John Mayer station (it's always fun to cook to music)

Boil until tomatoes start to peel-
-5 red medium off the vine tomatoes 
-7 jalapenos 
-4 or 5 serrano peppers

In blender add:
-cut stems off peppers and de-seed about half the peppers depending on the level of spicy you like
- add a tablespoon of honey
-2 squeezed limes
- a pinch of sugar
-tablespoon of olive oil
-hand full of chopped cilantro
- handful of chopped onion if you like, it's fine without any if you don't like onions
Now puree all 

Next in blender add:
-all tomatoes
- and a lot of garlic salt with parsley (I pretty much coat the whole top of the ingredients with this or until it taste perfecto!
Now just blend long enough to stir it, mix it, or to the consistency you want!

ENJOY!! Enjoy on your eggs in the morning, turkey for lunch, fajita bowl for dinner, instead of chips use carrots! be creative!!
